Zimtsterne (cinnamon stars) and a Merry Christmas!


Zimtsterne (Cinnamon-Stars) are a form of traditional treats that are associated with Christmas. You will find it in almost every household in Germany around this time of the year. It is a relatively simple and fun recipe, and the ingredients are also quite easy to obtain. Baking them is a good reason for a family to gather and celebrate the holidays.

Zimtsterne (Cinnamon-Stars)


dough:
350 g finely ground almonds
2 tsp. cinnamon
50 g flour
2 egg whites
100 g powdered sugar

glaze:
1 egg white
250 g powdered sugar
1 tbsp. flour


Mix the ground almonds with the cinnamon. Add the egg whites, flour and powdered sugar and mix everything together. Put the dough into the fridge for about 2 hours.

For the glaze beat the egg white until medium to firm peaks form. Mix the flour and powdered sugar together and put through a sieve. Slowly add to the egg white while continuing beating.

Roll out the dough between a sheets of plastic foil until about 1 cm thick. With a star cookie cutter cut out star shaped cookies. Using a small knife glaze each cookie with the egg white glaze. Put the cookies in the fridge for about 30 minutes.

Preheat the oven to 170°C (340°F). Lay the cookies on a baking sheet lines with parchment paper. Bake for about 10-15 minutes. Store them in a cookie tin for about 2-3 weeks. If they get hard, you can put an apple slice in the tin.
